For a couple of years now, I’ve fed my homesick heart with The Pioneer Woman’s Sour Cream Enchiladas, usually adding chicken. Little paprika to the sauce and some salt and pepper add a little bit of sour Cream Cup and a half of grated Monterey Jack cheese the rest of the roasted peppers and jalapeños warmup and tortillas in the microwave. Roll the tortilla and set aside, seam side down. In a large bowl, combine chicken, 1/2 cup enchilada sauce, 1/2 cup cheese, sour cream, cilantro and diced green chiles. They are delicious! To assemble the enchiladas, lay tortilla on a flat surface and spoon 1/4 cup of the chicken mixture in the center. But I am lazy in the kitchen, and all that frying made a huge mess. I'm gonna start assembling Minister with this delicious chicken cheese and then I'll roll it as tight as I can get it.
